Change Encoding Method to dual pass from single pass

I'm running the latest version of DVDFab Converter but am not able to change the Encoding Method when in the Advance Settings screen. It is just grayed out with no option to change. Is it possible to change this option to run a second more thorough pass? I seems to be getting a bit of jitter when playing back the up-converted video.

What are the characteristics of the Source file and to what are you attempting to convert it? Two-pass in my understanding makes the encoding more efficient but not necessarily higher video quality. Please attach or submit the DVDFab internal log file from one of the attempted 2-pass conversions.
