I can not get despicable me blu-ray to rip I rented 3 copies and tried it with no success, I then purchased a NEW copy, opened it and tried to burn it and still no success. I think I have attached the proper log

Please use Copy - Clone to create an ISO file and then use the ISO file as a source to convert again and see the result.
You may also try to use only Software for the conversion and if it will make a difference.
