Tested with Tracker S01E01 and S0102 (from Switzerland), and I have tried MP4 and MKV(ffmpeg)-settings.

In the USA, Tracker is on Disney+ as "Hulu content". It does download as AVC/H264. It appears that only AVC/H264 is available, as my default is set for H265, yet H264 is auto selected, and changing to H265 still downloads as H264.

Did you update StreamFab using the offline installer, or the "update now" button in the app? If the update button, exit StreamFab, clear your temp and log folders and use the offline installer, and try again. If it still gives you the V_QUICKTIME and garbled video on playback, post your logs.
