Hi Dan, you can preview those subtitle streams to confirm what they are and then select the one you need.
For most of the profiles in the Ripper module, you can choose to Remux subtitles, Render (burn in) subtitles into the video, Extract to an SRT file, or IDX/SUB file. To get a hardcoded one, you can select Render in the Advanced Settings window.
