A Knight of the Seven Kingdoms S01E01 downloaded from HBO as a movie instead of an episode, which forced me to create the folders for it, rename it appropriately (manually) and makes it so I can’t schedule future recordings.

Has anyone had this issue and is there anything to do about it?

Downloaded fine as series for me yesterday when testing 4K downloads via updated D+HULU-HBO bundle account.

This usually happens when HBO Max metadata is misread during analysis. The episode is then treated as a standalone title instead of part of a series. Reanalyzing the episode or restarting StreamFab typically fixes it. If it keeps happening, send the StreamFab.log to support so they can correct the show metadata mapping.
