There is some terminology difficulty here. DVDFab Ripper is used to create individual video files and has the video effects settings mentioned. Using DVDFab Copy to "rip" the DVD to the hard drive will not change the aspect ratio as specified on the DVD.
What you have is called letterbox content and you cannot play the files directly. DVD playback software should recognize the letterbox and display it full width. Otherwise, you can use DVDFab Ripper to create a different file (mkv, mp4, avi) that has the correct aspect ratio. Just don't use MKV.remux of VOB Passthrough as these will not correct the aspect ratio.
