1) I've just been trialling Ripper and have found that it remove TrueHD audio from the m2ts output even without asking.
2) The video output also started glitching about an hour into a movie and the sound became out of sync by about 3 seconds - oops!
3) And I see no sign of forced subtitles even though I checked the box.

Please upgrade to DVDFab 8.0.7.3 with which you can enable/disable the “remove HD audio” box in Blu-ray Ripper.
Please open Common Settings->General->A/V Codec, set all the video decoder options and video encoder options as Software, then convert again to see if you can fix this a/v sync issue.
If there are no forced subs in the stream you selected, output file will be displayed with no subtitle in player. Please play the original disc in your player to select the stream that contains forced subs and check Display only forced in Blu-ray Ripper(if they are actually forced).
You can also find out which stream they are located in using the DVDFab preview window, then select the correct forced subpicutre to convert.
