When I download from Apple TV or Paramount + the file size is very large. An Epson of the Simpsons downloaded from Hulu is 200mb. A Simpsons episode from Paramount + is 800mb. Is there a way to download smaller file sizes? Thanks

Hulu is only downloading 720p (at best currently)
if you desire the lower quality from other services as well you can switch the 720p globally by going to Settings->Streaming Services->Video Resolution and change to HD instead of Full HD.
although I would do it personally, you also may want to change the Audio Codec to AAC if you're more concerned with size over quality. If it's available on those platforms, for the stereo version of audio instead of 5.1 surround what EAC/AC3 usually provides
