@wthomas69 What version of StreamFab are you using? I just downloaded 2 of the 3 using 5.0.1.1 and I'm seeing different file sizes than you.
Downloading The Ruins from Paramount+, the file is 3.03GB on disk. Its AVC/H264 with 4,500 kb/s 1920*1080 video and English 384 kb/s, 48 kHz, 6 channel AC-3 (Dolby Digital) audio.
I tried downloading Young Guns II from P+. StreamFab has a reencoding step for it (likely due to the new DRM changes that started Dec 1) before remuxing. Because I have "Enable GPU Hardware Acceleration" checked (Settings -> VIP Settings) my GPU (Nvidia RTX3060) does get used for the reencoding step.
The resulting file is 4.05GB. Its an AVC/H264 with5,370 kb/s 1920*1080 video and English 192 kb/s 48kHz, 6 channel E-AC-3 (Dolby Digital Plus) audio.
Do you have option for Enable GPU Hardware Acceleration checked or unchecked? and if so, what video card do you have? And can you disable and try to download again to see what file size you come up with?
and as Mona said, definitely share the logs with the devs either attaching here, or using the feedback option on the menu in StreamFab

From plex
The Ruins 3.04 gb file 1080x1920 4800kbps mp4 h.264 384 kbps 48k ac3 5.1
YG2 12.88 gb file, 1080x1920 17710kbps mp4 h.264 192 kbps 48k eac3 5.1
the second try of the ruins was better, the first attempt produced a file of 1.58 gb. Only noticed because the P+ downloads were WAY different in size to each other. The hbo downloads are pretty consistant at 6-10 gb each.
