Then I installed it brand-spanking new and authorized it again and NOW it properly detected and downloaded the available Disney+ 1080p video that it had been failing on before. The updater probably corrupted something (likely including my configuration). My previous uninstalling/reinstalling w/o removing the configuration did nothing to resolve. I had to opt to wipe the slate completely clean before it now works with the 6192 build.

I recently did a huge upgrade from 6.1.8.7 to 6.1.9.6 and the same thing is happening to me as well. It used to be 1080p, then it disappeared and they re-implemented it in 6.1.8.3 as seen in their changelog and the image that @jpp72 posted, and now it's gone again. Does anyone from the StreamFab team know when the 1080p options on older content from Disney+ will be availible again in a future update?
