I don't want sf to add a max or youtube FOLDER to my directory. I've searched thru settings and set my own custom directory. Every time I go to my directory there sits a max and youtube folder even though I deleted it on previous session.

You can remove the creation of Youtube directory in StreamFab.ini
by removing it from: AudioDirectory + VideoDirectory + ChannelDirectory

but as Brozilla correctly noted ..
.. this is reset by every change in your SF Settings

I don't like that either (like s01 default directory for series)
