I also noticed that the film in the Disney app on my PC almost completely fills the 16:9 area, with only very narrow black bars at the top and bottom. The Streamfab files, on the other hand, have significantly wider black bars, more in line with the classic 2.35:1 cinematic aspect ratio.
I tested this with Avengers: Infinity War.
Yes, on my PC (using Chrome and Edge), watching Infinity War fills the screen like you said, even if I go under versions and pick the Original Cinematic. That being said, using the D+ app on my Shield TV Pro, the Imax fills almost the entire height of the screen, there are very slim black bars. The Cinematic is 2.39:1, i.e. has bigger black bars.
As for StreamFab, I downloaded all 3 for Infinity War. Main Movie, and the Imax Enhanced and other version listed under Extras -> Versions. The IMAX Enhanced and Main Movie have slim black bars. The Cinematic version DOES fill the screen like playing it via Chrome, and the Meta Data description does say its the Cinematic version.
I know the the 4K Bluray is 2.39:1 however Infinity War was shot in IMAX and had an IMAX version in the theaters that was 1.9:1 so its possible Infinity War D+ IMAX Enhanced is the entire movie at 1.9:1, unlike the other Marvel movies which only had select scenes.
Is it possible there is an issue with Disney+ via web browser for this title? I mean since playback via Chrome is not the 2.35:1 version, that eliminates SF.
