Can't change output?

So we just decided to upgrade to 10 after much hesitation because I hate learning something and then having to relearn (snort)

Problem we are having is we are using the 8 gig double layer discs and we can not tell 10 to change its' output to dvd9. I looked up instructions for 10 and we don't see how but the one option and that option doesn't come up for us after we choose either clone or copy or full disc. none gives us the option and we need help =(
