Blu-ray to Ipad retina

I want to make to best possible conversion (picture quality and surround sound) but every time I do a conversion I either get English subtitles which I don't want or no sound at all. What the hell and I doing wrong? BTW I am using the all in one registered version. Many thanks for any member suggestions.
