Blu Ray Creator Menu Questions...

So you only have menus for "Play", "Scenes", and "Setup".

"Scenes" doesn't really seem to do anything, other than another way to "Play". I know that you can add several episodes or titles. What setting would you use to play individual episodes or titles from there?

Are there better instructions other than an old outdated video that looks nothing like the current Creator?

And are there default options to get the best possible picture/encoding/etc. ?

Normally, one video (episode or title) is one scene on the menu. If a video contains more than one episode or title, it doesn't support playing individual episodes or titles from the menu.
We are working on a new version of the custom menu, you may wait and have a try.
If you have suggestions about this part, please list them, I will get the product designer check.
