How do i choose folder or iso when making a backup?

Ok. Maybe a stupid question, but.

When making a full backup, keeping everything.
I choose to copy the whole disc, and that will
back up the blu-ray in folders not an iso. Right?

If i want an iso, how do i choose that?

I`m only making 100% backups for playback
on my computer, not burning the titles. So
folder is the best way for me to go i presume.

But after i have made the backup, full size and
in folders. Can i then change it to an iso, or
shrink it? If i wanna burn it.
