Hi,

I recently went to rip a DVD, only to find some of the Extras refuse to show up in DVDFab. Is there a reason why this might happen?

(They show up in DVDshrink)

Yes but without more information we will never know what it is.

What mode/settings are you using?

Sounds like an old DVD maybe Disable Pathplayer and give it another try. Also the info Gruñón asked for would be a big help as well
