DVD Ripper Is 2.0 & 5.1 Possible In One File?

My AppleTV purchased movies which I play on my TV as well as on the iPad come with both 2.0 & 5.1 soundtracks on them. I have been encoding my DVD's with the iPad default settings and only get the 2.0 track.

Is it possible to get both tracks on the file?
Which settings should I use so that I can play the same file in both the AppleTV in 5.1 and on the iPad in 2.0?

I was hoping my AppleTV encodes would retain 5.1 , guess not.
