BD Ripper (3D Plus) Will DVDFab work for what I want?

What I want to do is rip only the movie (no extras or menus) with lossless audio (converted to FLAC) to an MKV file. BUT, I also want to limit the 1080p file to 10-11 gigs and keep only the English subtitle track.

I've read that I need to convert to FLAC because True HD and DTS HD-MA won't work properly.

Well, I do not think DVDFab is now capable of converting the original audio into FLAC stream.

By "True HD and DTS HD-MA won't work properly", it is better that you be more specific.
