Well, it took me a lot of searching, but I was finally able to solve this one. I'm posting both the problem and the solution so it might help others with the same issue, and I'm seeing the post with all of the keywords that I used.
My problem was that when copying bluray movies to m2ts files using BD Ripper, the colors appeared to be pale and washed out. Still plenty watchable, but ... less than it should have been.
Here's the solution that worked for me:
That's it. Since I have an ATI video card, it doesn't have much impact on encoding time. But now your colors should look fine.
Now the problem is solved, so this is purely academic, but can someone explain to me WHY this solution works? I understand that the default settings enable faster encoding times for nVidia cards. But why should the setting mute the colors for those with other video cards?

- In DVDFab, click the green checkmark in the top right corner to bring up the Common Settings interface.
- In the left-hand navigation pane, select General > A/V Codec.
- Check the box labeled "Disable all GPU codecs for decoding and encoding." All video decoder dropdowns should switch to the value "Software."
- Click OK to save changes.
