I am trying to take a back up dvd and convert it to play on my itunes or apple tv. I dvd ripped to apple tv and played it on itunes and the subtitles are on . I am very new to this and maybe someone can show me the light.

I'm assuming that you don't want subtitles. When you select the movie title uncheck all the boxes under "subpicture" and you won't get any. See attached:Attached FilesHow to post the internal log
