DVD Ripper subtitles always on

first time ripper, sorry if this is elsewhere. when I rip my copies of Long Way Round to iPad the english subtitles are always displayed. they're displayed when played in iTunes as well. I tried generic mp4 and they're still displayed.

how to I disable the subtitles when I rip?

With mp4 the subtitles are either on or off, just remove the check from all subtitles. See attached:
You can't remove them or turn them off once rendered into the video stream, you must remake the mp4.
