With DVDFab 8 I was able to use Nook.Nook Tablet.fabpfpkg to rip DVDs for my Nook Tablet (not the HD version).
Does this profile still work with DVDFab 9?

You can use MP4.h264 AAC stereo with screen resolution 854x480 should work a treat for you.

My wife has a Nook Color one of the early versions and I made a Disney short subject using MP4 and it worked really good like this:
