BD Ripper (3D Plus) How do I set output Bitrate in DVDFab9 for MKV files?

So, I decided to start giving DVDFab9 a try (I've had the license for a while, but I knew how to "drive" DVDfab8), and I can't for the life of me work out how to set the output bitrate for MKV files, the bitrate fields are there, but I can't select them to enter anything into them. Also, I can't see how to control the handling of subtitles.

In the "video quality" box select "customize, then set the desired bit rate in the box below it. See attached:

Thanks. Next question, how do I set subtitles to forced only, and generally control how subtitles are dealt with?
