can someone tell me what these 2 do in blu-ray ripper? are they the same as using the highest quality of audio and video? thanks!

They are a true copy
If you select copy audio, it means that the soundtrack on the disk is preserved. For exmaple if it had a DTS HD MA 7.1 audio track, then that track will be included untouched in the output. I use this option because I play everything back through a Reciever that plays back through my 7.1 speaker setup.
If you select copy video, the video doesn't get compressed, so you get exactly the same quality of video as found on the source, at the expense of large file sizes (20+GB for movie.)
