I am looking at buying the blu ray ripper software but in the trial version the maximum resolution I get is 1920x800. Does this change after the purchase to 1920x1080

That's probably a function of auto-cropping, it saves you from encoding black space around the edges (top and bottom) and saves file size. You can turn it off in common settings.
