Convert UHD to normal MKV

Seems like there is no option to convert a UHD bluuray to regular MKV 1080. Only the 10 Bit etc.
Is there a way around that? I don't need to have my MKV 36 gb for just on the go... Need to have it like the rest 2-4 Gb.
