I've experimented with this a bit up to an including 8.0.5.0 as I've been having trouble getting video that does not stutter when served from iTunes to AppleTV over LAN. As it turns out if I use the predefined settings for ripping to AppleTV (in the last version or two) it creates video that plays fine on iPad and plays fine on XBOX360 when shared from NAS, but the video stutters consistently and very, very noticeably throughout playing on the AppleTV.
In my tests I've found that if I encode the rip to target the iPad/iPhone presets the output works on all.
I have tried and still have my encoding set to software for video and probably two or three other tweaks I found here on the board that folks found addressed the issue for them. No such luck for me.
