Here's what i did for the subs from bluray.
Rip the disc with makemkv, then rip another one with dvdfab and after that mux them with mkvtoolnix. Ended up with an .m4v file which contain the subs file that you can enable or disable as you like..
And i think you can even add more audio streams n subs too
