I thought I had read a patch note for 3.1.0.0 that said Disney+ would download in 720p and 5.1 audio. Assuming the show is 5.1.
I downloaded Start Wars The Clone Wars S01E01 and it was only 2 channel Stereo. I know the program is 5.1 because when I watch it on my Roku my receiver detects it as 5.1
