In the event that something goes catastrophically wrong (or, just an irritating bug) with StreamFab 5, where can we re-download version 4.0.2.6?

The offline installer for a particular version is only available until the next version is released.
If you purchased the Extended Download Service, you should be able to download it from My Account https://www.dvdfab.cn/member.htm?trackid=more_menu (I'm not sure if you purchase it "NOW" how far back it will allow you to download).
If you didn't purchase extended download, then its up to you to download and keep the Offline Installer with each release for the versions you might wish to have later.
