Have you tried closing out StreamFab, playing the episodes on the Paramount+ website, and then trying again? I have downloaded a ton of shows from Paramount+ but haven't had any that I completely was unable to download after retrying. I've had a few odd episodes only download in 720p when the rest of the season downloads in 1080p but nothing that was impossible to download.

Why do some episodes from a particular series fail?

Because they are part of the global DRM block.
