Even though I wasn't involved in this discussion, I have had a similar problem with Paramount + and two series: Hawaii Five-0 and Star Trek, Strange New Worlds.
I downloaded the beta version, cleared the log files and cache, installed the file and rebooted the computer. The log file is attached with the results of my limited testing.
Using 6.1.1.9, I had no English subtitles from either show when I set them for the queue, but I had French and Italian. Hawaii Five-0 Season 9 has no change; still showing French and Italian with no English.
Strange New Worlds, Season 1, E1 provided no subtitles, though examining the resulting file, it had French and Italian subtitles. E2 Provided Italian and English subtitles in the downloaded file.
This was limited testing as I'm in the middle of working on my garden.

Normally, Paramount will download the subtitles available for downloading. Can you get English subtitles through a regular web browser when playback?

Ironically, English was selected and with Episodes 2, 3, 4, 5, and 7, English subtitles were captured. Episodes 1, 6, 8, 9, and 10, another language was displayed. The above two shots are from Episode 1.
