NF offer hevc only as HDR or DV - change in NF VIP settings - Video Codec

But it's also possible that your device/player shows HDR in pink
        more info here

btw: I can't test HDR because I've only NF Standard plan ..
.. it's not offered without Premium plan

H265 SDR is no more offered for NF since many weeks ..

And the option also will be removed from StreamFab.

If you just want something that every player will play, you can choose H264.

If you want slightly smaller files with a more efficient compression, chose the High Profile in conjunction with H264.

If you want much smaller files without the need of having a display that supports HDR10 or Dolby Vision, get AV1 files. Only problem is you need fairly recent hardware to decode these files. I'd say just download a few files and see if they play for you.

For me, H265 HDR10 is great because i get the smaller files and the High Dynamic Range. But if you can't play HDR10/DoVi files, AV1 is the next best thing for a more efficient codec

I don't know what changed on my system, but my software player (MPC HC) now tone maps DV and HDR10/+. I used to always have to use VLC for HDR10, and for DV, nothing worked. They say Jellyfin would fix that, but I could never figure out how to get Jellyfin to work, too confusing.
I don't know if maybe either the Windows Media pack optional update did it months ago or if a K-Lite codec pack update did it, or neither (??) I just know, they work fine now!
