DVD Copy Forced subtitles

I would like to have an option to force a specific subtitle to be display during a DVD movie.

You can do this now if you use Main Movie or Customize mode with no menus. Click just to the left side of the box for the sub stream that you have checked, a small arrow will appear and make the selected stream play by default whenever the disc is played. It is not the same as true forced subs but has the same effect if you play the disc from the beginning.
