I was wondering if it's possible to pull out audio from movie?

Yes, in DVD Ripper many of the profiles have an option for audio only. You can convert it to AAC, MP3 etc. Not sure about a passthrough of the AC-3 stream from most movies or odd audio types like LPCM etc.

Does anyone know if DVDFab has options to set bitrate(sound quality) for MP3s before they are extracted?

I have been using "Video mp3 Extractor", a free program that will let you select bitrate before you extract any sounds out of a video file.

I will compare if DVDFab does a better job and if so I will be using it for that as well.

I wasn't aware DVDFab had that option at all.

Yes, you can set the bitrate before making the conversion for MP3 and AAC, but not AC-3.
