I am new to this, so please bear with me. Copying some old DVD's to MKV files. What is the difference between MKV Passthrough and MKV Default???

MKV Passthrough does not re-encode the video, so the output of Passthrough in your case (with DVD Sources) would be MPEG-2 in an MKV wrapper, the same identical video that is in the VOB files on the disc. The MKV default profile decodes the video, then re-encodes it as h264. And in most cases, the quality of the smaller X264 files will not be discernibly different from the passthrough files as X264 is a more modern, efficient codec.
