I have a pair of ATI HD 6800 graphics cards. What is the best setting under "common settings" to take advantage of the ATI hardware? OR What is the best graphics card that takes advantage of DVDFab Quick Sync technology?

Nvidia cards are generally more popular among Fab users, Quick Sync is an Intel technology that requires their motherboard graphics adapters but works very well with DVDFab.
