Can DVD FAB COPY be configured to rip DVD files directly to iso on my HDD? I'm aware that I can convert ripped DVD files to iso using imgburn but I'd like to skip a step.

Yes, it can. Just click the image icon in the 'Save to' area near the bottom of the window (see capture) for any Copy mode. Clone mode always writes an ISO if you have selected a HDD Target.
Note that Build mode in ImgBurn gives you more control over the layer break if you are burning DL.
