BD Ripper (3D Plus) Ripping specific scenes?

I know there is an option to pull particular chapters out of a BluRay but is there a way to get more granular? I'm looking to create a demo clip of some of the greatest movie scenes and I just want specific scenes and not the entire chapter. Is it possible with DVDFab? If not, what are my options?

I'm looking to maintain BluRay quality with multichannel.

Yes, I'm looking to create a series of clips from different Blu-Ray movies.

I want to rip (random example):
23:12-25:58 of Sound of Music
11:15-12:01 of Lord of the Rings
58:04-58:25 of Brave Heart

I will then take those and find an editing software to create the demo clip.
