The last couple of movies I've ripped (The Finest Hours, Black Hawk Down, Joy) have the DVDFab logo popping up intermittently in the upper left hand corner of the screen during playback. How do I disable this? Or more to the point, for someone who purchased the product, why is this even happening?

This means the product is in trial mode. You need to activate it (normally does this itself). Internet connection required for activation. See capture.
