I installed the latest release of DVDfab (on 5/23) and all my old personal rip profiles have disappeared and the new profile system doesn't seem to include any 8-bit x264 profiles, what's going on?

It is a new feature called Profile Preset and if you use the same one for every rip it can save you some time. All of the old profiles should still be there and will come back if you preset them.
