Is there any way to convert from DVD/Blu-Ray and keep the audio quality?

Is there any way to convert from DVD/Blu-Ray and keep the audio quality?
Right now, all I can see is to have it set to 2-channel, either with Dolby or not, or am I missing something? I would like to get more surround sound, if possible.

On the Advanced Settings page in Ripper, check the box that says “Copy Audio”, it will provide the same stream that is on the disc in the Ripper output file. Note that this will make the mkv much larger than it would be with re-encoded audio such as AAC. Also, make sure your playback device will support it, not all will.
