What's the difference between the h265 hevc mp4 profile vs h26510bit mp4 profile please? Thanks.

Hevc is just another way to refer to the h265 codec. The “10-bit” refers to the way the color information is processed, it allegedly looks better. This is all trade offs with processing time versus output image quality, file size etc., the choice of which is subjective. I would suggest some tests of the same source file with different settings to see which looks best to you on your equipment.
